Still, this honey is immature with high moisture content, the honey is left in the honeycomb cell for maturing i.e until it’s moisture content is reduced to <20%. This changes the nectar into honey. 

As the moisture level goes down the honey matures and bees seal the honey-filled comb with their special beeswax. And now the honey is ideally ready for consumption.
