Ingredients

  • 250gm Bhindi
  • 1 and ½ tsp Salt
  • 1 tsp Red Chilli Powder
  • ½ tsp Turmeric Powder
  • ½ tsp Garam Masala Powder
  • ½ tsp Cumin Powder
  • 1 tsp Chaat Masala Powder
  • 3 tbsp Besan
  • Oil for frying
  • 1 Lemon

Method

  • Cut the lady’s finger (Bhindi) in long slices, and discard the seeds.
  • Add besan, lemon juice, salt and all the spices on the bhindi and coat well. 
  • Rest it for 15 Minutes and pat dry the slit bhindi on tissue paper. 
  • Place a kadhai on medium heat and add healthy roots Cold Pressed Natural Mustard Oil.
  • Fill ½ kadhai with oil and let it heat.
  • Once the oil becomes hot, deep fry the bhindi in oil until golden brown and crisp.
  • Strain the excess oil by placing the fried bhindi on tissue paper.

Bitter Gourd Pickle with Cold Pressed Mustard Oil

Ingredients

  • Karela ½ kilograms ( 7-8 medium sized)
  • Hing (asafoetida) – ¼ tsp
  • Jira (cumin) – 2 tsp
  • Methi dane (fenugreek) – 2 tsp
  • Raw Saunf (fennel) – 4 tsp
  • Yellow mustard – 2 tsp
  • Haldi powder – 1 tsp
  • Lal mirch powder –  1 tsp
  • Kala namak – 1 tsp
  • Salt –  3 tsp
  • Mix curry powder – 1/2 tsp
  • Cold Pressed Mustard oil – 200 grams (1 cup)
  • Vinegar -1 tbsp or juice of 2 lemons

Method

  • Cut the karela into thin round slices. Apply salt to the slices and keep aside for 60 mins. 
  • Now place them in boiling water for 5 minutes and strain excess water and dry the slices with the help of a cotton cloth.
  • In a pan, dry roast hing, jira, methi and saunf until it turns light brown. Allow them to cool down and then grind  them along with yellow mustard into a coarse powder.
  • Mix the bitter gourd slices and the coarse masala mix properly. Squeeze lemon juice and mix with a spoon properly.
  • Now put these marinated slices into a glass or plastic container. Add cold pressed mustard oil enough to submerge the pickle completely.
  • Your bitter gourd pickle is ready to eat. Enjoy!
