  • Fresh tofu
  • 3 tbsp. Extra Virgin Sesame Oil
  • Soya Sauce
  • 1/2 tsp. freshly ground black pepper
  • 2 tbsp. cornstarch
  • Salt
  • 3 cloves garlic, minced
  • 1 tbsp. freshly minced ginger
  • 8 oz. string beans, trimmed
  • 2 small carrots, sliced
  • 1 small head broccoli, cut into florets
  • 1 red bell pepper, seeded and sliced
  • 2 green onions, thinly sliced


  • Cut tofu into bite-sized pieces, then toss together with soy sauce, sesame oil, and black pepper in a medium bowl. Once liquids are absorbed, toss tofu with cornstarch. 
  • In a large skillet over medium-high heat, heat 2 tablespoons oil. 
  • Add tofu and let cook until golden on all sides, turning occasionally, 7 to 8 minutes. Season with salt and pepper, and remove from the skillet and set aside. 
  • Heat remaining 1 tablespoon oil and add in garlic and ginger and cook until fragrant, 1 minute. Stir in string beans, carrots, broccoli, red pepper, and green onions. Cook until tender, about 8 to 10 minutes. Season with salt and pepper.
  • In a small bowl, stir together soy sauce, sesame oil, water, brown sugar, and cornstarch. Return tofu to skillet and add sauce mixture to pan. Stir and cook until slightly thickened, 2 minutes.

  • 400 g gram flour (besan)
  • 1/2 teaspoon crushed green chilli
  • salt as required
  • 1/2 teaspoon asafoetida
  • 1/2 teaspoon red chilli powder
  • 10 medium colocasia Leaves
  • 5 g sesame seeds
  • 1/2 teaspoon ginger paste
  • Organic Sesame Oil as required
  • 1 teaspoon powdered turmeric
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon tamarind paste
  • 1/4 cup jaggery
  • water as required


1. Prepare the besan mixture: To prepare this recipe, grate the jaggery in a small bowl and keep it aside. Now, take a separate bowl and add gram flour, ginger-chilli paste, turmeric, red chilli powder, 1/2 teaspoon asafoetida, jaggery, oil and tamarind paste to it.

2. Wash and remove veins of the colocasia leaves: Now add water along with salt and mix well until it turns into a smooth paste. On the other hand, wash the colocasia leaves and place them on a chopping board. With the help of a knife, carefully remove the veins from the centre of the leaves.

3. Apply the besan mixture on the leaves: Next, apply the besan mixture on one leaf and place another leaf over it. Make sure that the mixture is evenly coated. Continue this procedure with other leaves.

4. Roll up the leaves and steam: Now carefully roll the leaves and steam in a steamer for about 20 minutes. When it cools down, cut the leaves into 1-inch slices.

5. Heat oil & add mustard seeds & asafetida: Heat Cold Pressed Sesame Oil in a pan over medium flame and add mustard seeds and sesame seeds to it. Now add the remaining asafetida along with sesame seeds and wait for them to crackle.

6. Saute the rolled Patras: Now add the Patras and gently saute them for a minute. Serve hot with any chutney of your choice. You can even garnish it with fresh coriander leaves.
